My mom used this recipe, and when I went off to college I took it with me. I think it might have come from her Better Homes and Garden Cookbook, but I'm not sure, and my BH&GC has a different waffle recipe.
Here goes:
Oh, Boy! Waffles
2 1/4 Cups flour
4 teaspoons baking powder
3/4 teaspoon salt
1 1/2 tablespoons sugar
2 beaten eggs
2 1/4 Cups milk
3/4 Cup vegetable oil
Sift together dry ingredients. Combine remaining ingredients. Add to dry mix just before baking, beating only till moistened. (Batter is thin and lumpy). Bake in preheated waffle iron.
Yields about 10 waffles.
Happy Eating!
